A refreshing and creamy cucumber salad perfect for summer gatherings.


Ingredients

  • 3 cups thinly sliced cucumbers
  • 1 cup thinly sliced red onion
  • 1/2 cup sour cream
  • 1 Tablespoon white vinegar
  • 2 Tablespoons minced fresh dill
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Cut the onion into thin slices using a sharp knife or mandoline.
  2. Wash the cucumbers, then cut them into thin slices and pat them dry with paper towels to absorb any excess moisture.
  3. In a medium mixing bowl, combine the sour cream, white vinegar, minced fresh dill, granulated sugar, salt, and garlic powder. Stir until combined.
  4. Add the sliced cucumbers and red onion and toss gently to coat.
  5. Garnish with additional fresh dill and fresh black pepper as desired.
  6. Serve immediately or cover and chill before serving. Store leftovers, covered, in the refrigerator for up to 3 days.

Notes

  • This salad tastes best when made at least 1 hour in advance and refrigerated to let the flavors combine.
  • If making further in advance, slice and store the vegetables separately, then toss with the dressing just before serving.
  • This salad will last up to 3 days stored in an airtight container in the fridge.
