Description

A warm and comforting seafood soup that combines a variety of seafood with fresh vegetables and aromatic herbs.


Ingredients

Scale
  • 1 pound mixed seafood (shrimp, scallops, and fish)
  • 4 cups fish stock
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until soft, about 5 minutes.
  3. Stir in diced tomatoes, thyme, bay leaf, and fish stock.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add mixed seafood and cook until done, about 5-7 minutes.
  6. Season with salt and pepper to taste.
  7. Remove bay leaf before serving.

Notes

  • Feel free to add other seafood like mussels or clams for extra flavor.
  • Serve with crusty bread for a complete meal.
