- 1 tsp kosher salt (adjust to taste)
- ½ tsp freshly ground black pepper
- 12 small corn tortillas (about 3–4 inches)
- ½ cup finely chopped white onion
- ½ cup chopped fresh cilantro
- 2–3 limes, cut into wedges for serving
- 2 tbsp vegetable oil or neutral oil (for cooking)
- Optional: crumbled cotija cheese, salsa verde, or pickled jalapeños (to taste)
Instructions
- Marinate the chicken with your choice of spices and seasonings for at least 30 minutes.
- Grill the chicken until cooked through, about 6-8 minutes per side; ensure internal temperature reaches 165°F (74°C).
- Warm the corn tortillas on a grill or pan until pliable.
- Place sliced grilled chicken in each tortilla.
- Top with chopped onion and cilantro.
- Squeeze fresh lime over tacos before serving.
