  • 1 tsp kosher salt (adjust to taste)
  • ½ tsp freshly ground black pepper
  • 12 small corn tortillas (about 34 inches)
  • ½ cup finely chopped white onion
  • ½ cup chopped fresh cilantro
  • 23 limes, cut into wedges for serving
  • 2 tbsp vegetable oil or neutral oil (for cooking)
  • Optional: crumbled cotija cheese, salsa verde, or pickled jalapeños (to taste)

Instructions

  1. Marinate the chicken with your choice of spices and seasonings for at least 30 minutes.
