Ingredients

  • 1 pound boneless skinless chicken thighs or breasts, cut into bite sized pieces
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 cloves garlic, chopped
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • 1 cup chicken broth
  • 1 cup pumpkin puree (or butternut squash puree)
  • 1/2 cup heavy/whipping cream
  • 1/2 cup grated Parmigiano Reggiano (Parmesan cheese)
  • 1 pound fresh gnocchi (use gluten-free gnocchi for a gluten-free option)
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the chicken, seasoned with paprika, salt, and pepper. Cook for 5 minutes.
  3. Add the onion and bell pepper. Cook until tender, about 5 minutes.
  4. Add the garlic and sage. Cook until fragrant, about 1 minute.
  5. Add the chicken broth and pumpkin puree. Mix, bring to a boil, reduce heat, and simmer for 5 minutes.
  6. Mix in the cream and cheese. Let the cheese melt into the sauce.
  7. Add the gnocchi and cook for 5 minutes.
  8. Season with salt and pepper to taste.

Notes

  • If using vacuum sealed, dried, or frozen gnocchi, cook according to package directions before adding to the sauce.
  • For variations, replace chicken with turkey or Italian sausage.
  • You can substitute chicken broth with soft apple cider.
  • Add 1/4 cup sun-dried tomatoes, thinly sliced. You can use the oil from the jar to cook the chicken and onions.
  • Add 4-6 ounces fresh baby spinach at the end and mix until wilted.
  • Add a pinch of nutmeg or cinnamon.
