  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1/4 cup grated Parmesan cheese
  • 4 tablespoons olive oil, divided
  • 4 tablespoons unsalted butter, divided
  • 1/2 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • 2 tablespoons fresh chopped parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the chicken: Pound the chicken cutlets to an even 1/4-inch thickness. Season both sides with salt and pepper.
  2. Set up dredging stations: In one shallow dish, whisk together the flour. In another, beat the eggs with Parmesan cheese.
  3. Dredge the chicken: Coat each chicken cutlet first in flour, shaking off excess, then dip into the egg mixture, ensuring it’s fully coated.
  4. Pan-fry the chicken: Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Cook chicken in batches for 2-3 minutes per side, until golden brown and cooked through. Remove chicken to a plate and keep warm.
  5. Make the sauce: Add the remaining 2 tablespoons of olive oil and 2 tablespoons of butter to the same skillet. Add the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  6. Add liquids: Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, until the sauce slightly thickens.
  7. Finish the sauce: Stir in the chopped parsley. Season with salt and pepper to taste.
