- 1 lb chicken breast, cooked and shredded
- 1 cup broccoli florets, steamed
- 1/2 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/4 cup cream cheese
- 1/4 cup milk
- 8 crepes (store-bought or homemade)
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes until it’s a smooth roux.
- Slowly add the chicken broth and milk, whisking constantly until the mixture thickens into a sauce.
- Stir in the cream cheese and shredded cheeses until melted and smooth. Season with salt and pepper to taste. Remove from heat.
- In a large bowl, combine the shredded chicken and steamed broccoli.
- Place the crepes on a flat surface. Spoon the chicken and broccoli mixture onto each crepe and roll them up.
- Place the rolled crepes in a greased baking dish.
- Pour the cheese sauce over the crepes, covering them evenly.
- Bake for 15-20 minutes, or until the crepes are heated through and the cheese is bubbly and golden.
Notes
- Feel free to use leftover chicken for a quicker preparation.
- For a lighter version, you can use low-fat cheese and milk.
- These crepes can be made ahead of time and baked just before serving.
