Ingredients

- 2 lbs beef chuck, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bell peppers, chopped
- 2 tomatoes, diced
- 2 cups beef broth
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- Salt and pepper to taste
- 1 bay leaf
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add the onion, garlic, and bell peppers, and sauté until softened.
- Add the tomatoes, beef broth, cumin, chili powder, salt, pepper, and bay leaf.
- Return the beef to the pot and bring to a boil.
- Reduce heat to low, cover, and simmer for about 2 hours or until the beef is tender.
- Remove the bay leaf and garnish with fresh cilantro before serving.
Notes
- Serve with rice or tortillas for a complete meal.
- This dish can be made a day in advance for better flavor.
