Description

Candy Corn Lush is a no-bake layered dessert inspired by Halloween’s iconic candy corn. It features a buttery graham cracker crust, a creamy yellow cheesecake layer, a sweet orange pudding layer, and is topped with whipped cream and candy corn for a festive finish.

  • For the Graham Cracker Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons butter, melted
  • For the No Bake ‘Yellow’ Cheesecake Layer:
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • Yellow gel food coloring
  • For the ‘Orange’ Pudding Layer:
  • 1 (3.4 ounce) package white chocolate instant pudding mix
  • 1 1/2 cups half and half
  • Orange gel food coloring
  • For the ‘White’ Whipped Cream Layer:
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup candy corn, for garnish

Instructions

  1. Prepare an 8×8 inch baking dish by spraying it with nonstick cooking spray.
  2. Make the Graham Cracker Crust: In a small bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly and evenly into the bottom of the prepared baking dish. Chill the crust in the refrigerator while you prepare the other layers.
  3. Make the No Bake Cheesecake Layer: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. In a separate bowl, beat the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Add yellow gel food coloring and mix until evenly blended to your desired color. Spread this yellow cheesecake layer evenly over the chilled crust.
  4. Make the Pudding Layer: In a clean mixing bowl, whisk together the white chocolate instant pudding mix and half and half until combined and it begins to thicken. Stir in orange gel food coloring, a little at a time, until your desired orange color is achieved. Spread this orange pudding layer over the yellow cheesecake layer.
  5. Make the Whipped Cream Layer: In a separate bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form, about 4-5 minutes. Spread the whipped cream evenly over the orange pudding layer.
  6. Cover the dish and refrigerate for at least 6-8 hours, or until fully chilled and set.
  7. Just before serving, cut the Candy Corn Lush into squares and garnish the top of each square with candy corn.

  • Using full-fat cream cheese provides the best texture for the no-bake cheesecake layer.
  • Gel food coloring is recommended for vibrant colors without altering the texture.
