  • 2 lbs potatoes, cut into 1-inch cubes
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup buffalo sauce
  • 1/4 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: ranch dressing, chopped celery, chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, garlic powder, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Roast the potatoes for 20-25 minutes, or until tender and golden brown.
  4. While the potatoes are roasting, prepare the buffalo chicken. In a medium bowl, combine the chicken cubes, buffalo sauce, and melted butter. Toss to coat evenly.
  5. Add the coated chicken to the baking sheet with the potatoes during the last 10-15 minutes of roasting time.
