Description

A creamy, cheesy, and spicy buffalo chicken dip baked in a skillet, perfect for game day or any gathering. This easy one-pan recipe uses shredded rotisserie chicken and is ready in under an hour.

  • 2 cups shredded rotisserie chicken
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup green onions, chopped
  • Tortilla chips or celery sticks, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine softened cream cheese, shredded rotisserie chicken, buffalo sauce, and ranch dressing. Mix until fully incorporated and smooth.
  3. Stir in half of the shredded cheddar and mozzarella cheese, reserving the other half for topping.
  4. Pour the chicken mixture into a large oven-safe skillet, spreading it evenly.
  5. Top with the remaining cheddar and mozzarella cheese.
  6. Bake for about 20 minutes, or until the cheeses are melted and bubbly.
  7. Remove from the oven, garnish with chopped green onions, and serve warm with tortilla chips or celery sticks.

Notes

  • For a lighter version, use low-fat cream cheese and ranch dressing.
