- 1 teaspoon Garlic Powder (or fresh minced garlic)

- 1 cup Green Olives (Castelvetrano preferred, Kalamata as substitute)
- 1/4 cup Parsley and Cilantro (or one)
- 1 medium Shallot (or red onion), diced
- 1/2 cup Lemon Juice (or lime juice)
- 1 tablespoon Grated Orange Zest
- 1 clove Crushed Garlic
- 1/4 teaspoon Red Pepper Flakes (adjust to taste)

- Prepare Citrus Olive Salsa: In a mixing bowl, combine chopped green olives, parsley, cilantro, diced shallot, olive oil, lemon juice, grated orange zest, crushed garlic, and red pepper flakes. Toss well and set aside to let the flavors meld.
- Season Branzino: Gently pat the branzino fillets dry with paper towels. Season on both sides with garlic powder, salt, pepper, and a drizzle of olive oil.
- Cooking Method (Air Fry): Preheat your air fryer to 400°F. Cook the branzino fillets for about 8 minutes, or until the fish flakes easily with a fork.
- Cooking Method (Bake): Preheat your oven to 400°F. Place the fillets on a baking tray and bake for around 10 minutes, finishing under the broiler for 1-2 minutes for a nice crisp.
- Cooking Method (Pan-Fry): Heat a bit of olive oil in a skillet over medium heat. Cook the branzino skin-side down for about 3 minutes, then flip and cook for another 3-4 minutes until done.
- Serve: Plate the crispy branzino and generously spoon the citrus olive salsa over the top. Garnish with lemon and orange slices.
