- 8 oz pasta
- 4 slices of bacon
- 1 cup cherry tomatoes, halved
- 2 cups romaine lettuce, chopped
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a skillet, cook the bacon over medium heat until crispy. Remove and crumble.
- In the same skillet, add the cherry tomatoes and sauté for 2-3 minutes.
- In a large bowl, combine the cooked pasta, crumbled bacon, sautéed tomatoes, and chopped lettuce.
- In a small bowl, mix the mayonnaise and lemon juice, then add to the pasta mixture.
- Toss everything together and season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator before serving.
Notes
- For a healthier option, use turkey bacon instead of regular bacon.
- Feel free to add other vegetables like avocado or cucumber for extra flavor.
