Bang Bang Chicken Skewers are a delicious and flavorful dish featuring marinated chicken grilled to perfection and served with a spicy sauce.

- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup mayonnaise
- 1/4 cup Thai sweet chili sauce
- 2 tablespoons Sriracha sauce (adjust to spice preference)
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- Wooden or metal skewers
- Fresh chopped parsley or green onions, for garnish
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together the mayonnaise, Thai sweet chili sauce, Sriracha, honey, and rice vinegar. Set aside 1/3 cup of the sauce for brushing and serving.
- Place chicken cubes in a large bowl. Add the remaining sauce to the chicken and toss to coat well. Cover and refrigerate for at least 30 minutes to marinate.
- Preheat grill or grill pan over medium-high heat.
- Thread the marinated chicken onto skewers. Brush lightly with olive oil and season with salt and pepper.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.
- In the final 2 minutes of grilling, brush skewers with the reserved sauce.
- Remove from grill and garnish with fresh chopped parsley or green onions. Serve hot with extra sauce on the side.
Notes
- Adjust the amount of Sriracha sauce based on your spice preference.
- For best results, marinate the chicken for longer if time allows.
- Serve with rice or a fresh salad for a complete meal.
