  • 8 slices Thin Slices of Ham
  • 4 slices Swiss Cheese
  • 1 cup Panko Breadcrumbs
  • 1/2 cup Flour
  • 2 large Eggs (beaten)
  • 2 tablespoons Butter
  • 1 cup Chicken Stock
  • 1/2 cup Double/Heavy Cream
  • 1 tablespoon Dijon Mustard
  • 1/4 cup Parmesan Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper

Instructions

  1. Preheat oven to 350°F (180°C). Spread panko breadcrumbs on a baking tray, lightly spray with oil, and bake for 5 minutes until golden. Let cool.
  2. Slice pockets into chicken breasts without cutting through. Stuff with ham and Swiss cheese, securing with toothpicks.
  3. Combine salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper in a bowl.
  4. Set up three bowls: seasoned flour, beaten eggs, and toasted breadcrumbs.
  5. Dredge chicken in flour, dip in eggs, then coat thoroughly with breadcrumbs.
  6. Place coated chicken on a wire rack over a foil-lined baking tray. Spray lightly with oil.
