Description

This cozy one-pan Autumn Harvest Chicken Skillet captures the flavors of fall. Juicy chicken breasts are simmered in apple cider with apples, caramelized onions, and thyme. Serve this easy autumn chicken skillet over mashed potatoes or rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil or butter
  • 1 large onion, thinly sliced
  • 2 apples, thinly sliced
  • 1 cup apple cider
  • ½ cup chicken broth
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • Salt & black pepper, to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add onions and cook for 3–4 minutes until softened.
  4. Stir in apple slices, cooking for 2–3 minutes until slightly tender.
  5. Pour in apple cider and chicken broth, scraping up browned bits from the bottom of the skillet.
  6. Add thyme, return chicken to the skillet, and simmer for 8–10 minutes until chicken is cooked through and the sauce reduces slightly.
  7. Serve this autumn harvest chicken skillet hot over mashed potatoes or rice, spooning sauce over the top.

Notes

  • Honeycrisp or Gala apples work well in this fall harvest chicken skillet recipe.
  • Ensure the apple cider is not vinegar.
